Sweet potato waffles with avocado, tomatoes and sour cream

Who says a waffle always has to be sweet? Savory waffles are in! These ones are made with sweet potato and oatmeal: you add no sugar and finish them with avocado, tomatoes and sour cream. Quickly on the table and something other than avocado toast. Delicious for breakfast, lunch or (Easter) brunch.

1. Grind the oatmeal into a fine flour in the food processor. Peel the sweet potato, cut into cubes and boil in salted water until done.

2. Drain the sweet potato and mix in the milk, oatmeal flour, baking powder, corn starch and salt. Grease the waffle iron with a little oil. Bake the waffles one by one on the highest setting of the waffle iron.

3. Cut the avocado in half lengthwise, remove the pit and spoon out the flesh. Cut into cubes. Halve the cherry tomatoes. Arrange the waffles in a bowl, spoon some sour cream on top, add cubes of avocado and cherry tomatoes and season with salt and pepper.

Would you rather not have a sweet potato? This recipe is also perfect with regular floury potatoes. Then, for example, finish the waffles with herb cheese and smoked salmon.
