Between March and April of the previous year, 51 people fell ill with gastrointestinal symptoms after dining at a restaurant in Bozeman, Montana. Following the temporary closure of the restaurant and subsequent inspection, the Montana Department of Public Health and Human Services and Montana’s Gallatin City-County Health Department coordinated with the CDC to conduct a matched case-control study. The study aimed to determine the source of the outbreak and revealed a significant association between consuming morel mushrooms and the gastrointestinal illness experienced by the patrons.

Interestingly, the study revealed a strong dose-response relationship, with the illness being more strongly associated with the consumption of raw morel mushrooms compared to partially cooked ones. The findings emphasize the potential risks associated with this widely considered edible mushroom.
