Scream:

Bulgur with lots of vegetables for 6 people:

150 g Bulgur
Two red onions
13 Knoblauch
1 fennel
2 green peppers
2 red peppers
2 carrots
2 sticks of celery
1 bunch of spring leeks
salt
1 tsp coarsely ground chipotle chili
cumin
0.1l olive oil
1 lemon
1/2 lime

Wash and peel the vegetables. Place the skins and trimmings of celery, carrots, leeks and garlic and fennel in a small saucepan with water and salt and simmer for 10 minutes. Place the bulgur in a bowl and mix with some cold water. When the vegetable broth is ready, pour hot vegetable broth over the bulgur and let it swell. Cut the vegetables into small cubes and sauté them in olive oil in a larger pot (sofrito). Squeeze the zest of one washed and dried lemon over the bulgur. When the vegetables are soft, add the bulgur to the pot, mix everything well and let it heat up. Season to taste with cumin, chipotle, lemon and lime juice.

Dill, coriander and mint pesto stalks:

1/4 bunch of dill
1/4 bunch coriander
1/4 bunch mint
2 green chillies
0.1 l olive oil
2 cloves garlic
A bit of salt

Cut off the stems of the herbs and chop very finely. Peel the garlic, crush with the back of a knife, chop and add to the herbs. Place the herbs in a mortar and grind. There may still be bits. Add salt. Add finely chopped green chillies and grate again. Add the olive oil, mix well and taste again.

Leaf spinach very easy for 4 people:

800g spinach leaves
70g Butter
Some olive oil
salt

Cut off the roots of the spinach leaves, leaving the stems on. Wash the spinach twice, drain and cut into large pieces. Heat a saucepan and add the spinach and let it wilt, add the butter and oil as well as the salt. He’s done in 7 minutes.
