Understanding Stunting: Causes, Effects, and the Role of Catfish in Preventing and Treating Stunting

Stunting is a chronic malnutrition problem caused by inadequate nutritional intake over a long period of time due to the provision of food that is not in accordance with nutritional needs. Stunting can occur starting from the womb and only appears when the child is two years old (Rahmadhita, 2020).

Indonesia has a stunting rate of 30.8% in 2018 and 27.7% in 2019. Despite the decline, Indonesia is ranked 108 out of 132 countries with the highest prevalence of stunting in the world (Vinci et al., 2022). According to WHO, this figure is still classified as chronic (Daracantika et al., 2021)

One of the effects of stunting is that children’s cognitive abilities are not optimal, which will affect their future lives. Cognitive ability is a child’s ability to think more complexly and do reasoning and problem solving (Daracantika et al., 2021).

One direct factor, namely food intake, plays an important role in the incidence of stunting. Food intake plays an important role in preventing stunting, including protein, carbohydrates and iodine. Protein is a very important nutrient for stunted children. This protein can be obtained from a number of sources, including meat, fish, eggs, nuts, mushroom extracts, milk, and poultry (Verawati et al., 2021).

One of the local products that can help improve the nutrition of pregnant women and babies so they are not stunted is catfish. Apart from being cheap, catfish also has very good properties, even when compared to beef (Riestamala et al., 2021).

Catfish is one of the fish that is most easily accepted by the community because it is easy to find in traditional markets because the potential for catfish production is quite large, especially in freshwater fisheries. In 100 g of catfish has nutritional content, namely 17.7 g protein, 4.8 g fat, 1.2 g minerals and 0.3 g carbohydrates. (Dewi Puspita & Astriana Kuntari, 2022)

Catfish also contains carotene, vitamin A, phosphorus, calcium, iron, vitamin B1, vitamin B6, vitamin B12, and is rich in amino acids such as leucine and lysine.

Leucine is an essential amino acid that is very necessary for the growth of children and maintaining nitrogen balance, and is useful for the formation of muscle protein, while lysine is one of the 9 essential amino acids needed for growth and tissue repair. Lysine is an amino acid which is very important and is needed for the growth and development of children.

Apart from being fried, catfish can also be processed into various snacks so that it can meet the daily needs of children apart from the main food. Various processed foods from catfish such as catfish nuggets. To increase the nutritional content in catfish nuggets, other ingredients such as vegetables can be added.

The following is one of the innovative recipes for processed Broccoli Catfish Nuggets containing 11.4 g of protein, 3.9 g of fat and 17.8 g of carbohydrates per 100 g of nuggets. (Kusumawardani et al., 2022)

Material

Catfish 200 g Carrots 100 g Broccoli 100 g Wheat flour 20 g Chicken eggs 60 g Grated cheese 20 g Pepper powder 3 g Salt 3 g Garlic 10 g

Processing Method

Clean the catfish and then grind it. Mix the fish meat, spices and vegetables. Print the nuggets in a tin. Steam the nuggets for 20 minutes. Cut the nuggets, dip them in the egg and coat them with breadcrumbs. Fry the nuggets for 2-3 minutes. Fish and vegetable nuggets ready to serve.
