After 36 years behind the Fromages de France stalls at the Haussonville covered market, Laurence Weber has passed her hand and her passion to Charles-Edouard and Jeanne Henry since 1is last july.

“It was a pleasure and it became a passion”, smiles Jeanne, who trained for two years with Laurence and who, like Charles-Edouard, took a vocational training certificate in Paris for a year.

Converted from the building trades, Charles-Edouard evokes a fairly “technical” job in which he values ​​his knowledge of the transformation of the product, the refining and his knowledge of the diversity of the terroirs. “We understand this concept better by going to meet the producers,” says Jeanne, who concedes that this requires a time that they have relatively little. “But just before the curfew was put in place, we were able to meet a producer in the Doubs who supplies us with Mont d’Or and Comté…”.

Ethical and authentic

Meeting the producers is essential for the two friends in civilian life. “We only want to work with those who respect animal welfare and work ethically,” explains Jeanne. Know-how that Charles-Edouard wants to put at the service of a loyal clientele “in order to offer them the ripening that suits them”.

Their commercial approach follows the same eco-responsible logic by offering bulk and participating in the operation “Too good to go” aimed at combating food waste. “We sell baskets at discounted prices for products that are out of date,” illustrates the couple who could almost claim a taste for the authentic.
