IPCVA to Showcase Argentine Beef at Caminos y Sabores Fair

The Institute for the Promotion of Argentine Beef (IPCVA) has announced its participation in the upcoming 17th edition of Caminos y Sabores, to be held from July 6 to 9 at La Rural in Palermo, Argentina. The IPCVA aims to highlight the significance of Argentine Meat in the country’s gastronomic culture.

George Grimberg, president of the IPCVA, emphasized the importance of the fair’s focus on gastronomy and its recognition of beef as a historical aspirational food for Argentines. He stated, “We are not only a country that produces beef, but also a country that consumes this food. That is why it is important to be present at Caminos y Sabores.”

In a departure from the traditional contest format, the IPCVA will sponsor the master class “Passion for Beef,” led by renowned cook Madame Papin. The class aims to showcase different ways of preparing the asado, a popular cut of Argentine domestic consumption. Grimberg explained, “We want to show different ways of preparing the asado, this star cut of Argentine domestic consumption.”

Madame Papin will present “Roast in the Garden,” a dish that highlights the flavors of Argentine meat using a variety of vegetables and condiments. Grimberg stated, “It will have everything a good plate of Argentine meat should have, and that it be simple, rich, and surprising.”

The IPCVA also provided insights into the internal consumption of bovine meat in Argentina. According to the IPCVA, in 2022, the average consumption of beef per inhabitant per year was 49 kilos. Beef remains the main meat choice for Argentines, followed by chicken (48 kilos) and pork (17 kilos). The most popular cuts of beef include roast, vacuum, minced meat, and Milanese. Additionally, during the winter, there is an increased consumption of cuts for stews and stews.

Grimberg addressed the impact of the growth of vegans, vegetarians, and flexitarians on meat consumption. He noted that these trends have remained stable in recent years, with vegetarians and vegans representing 7% of the Argentine population and flexitarians constituting 23%. As a result, consumers have become more selective in their meat choices, opting for leaner cuts and reducing the frequency of beef consumption.
