“Several years ago, I think it was 2015, one of my closest comrades did a three-month internship at a five-star hotel in New York City,” says a delighted Dries. He speaks quickly and remembers almost every detail. “It was a mega chic hotel, right in the center. Such a real skyscraper, exactly what you imagine when you think of New York, with a Gordon Ramsey restaurant.”
