The Right Way to Make Scrambled Eggs without Milk – Tips from Chefs

Scrambled eggs are a favorite practical menu for breakfast or dinner. In making it the chef does not recommend adding milk, here’s why.

When making scrambled eggs, many people add milk because they think it will make it taste more delicious. The milk added is usually fresh liquid milk or UHT milk.

Even though this cooking practice is common, in fact, according to chefs who manage several award-winning restaurants, adding milk when making scrambled eggs is not the right thing. He didn’t even recommend it.

As quoted from Mirror UK (18/7), Don Joines says, “Never add milk to scrambled eggs as it will dilute the flavor and make the texture rubbery.” He prefers the use of butter alias butter.

“I always use butter. Make sure to use it when the butter is golden, not brown, before you add the eggs. Keep stirring (the scrambled eggs) over medium to low heat,” she says.

And say use a spatula to stir the eggs until they are slightly runny in texture, but have come together. Scrambled eggs are guaranteed to have a more perfect texture and taste.

And it’s not the only practitioner to suggest these tips, but chef Luke Selby who works at the famous restaurant too. “Using milk only makes the scrambled eggs too runny,” says chef Selby.

According to food writer Rachel Phipps, adding milk to scrambled eggs almost certainly spoils the taste, too. “Scrambled eggs would be a little bland, and the color wouldn’t be pretty,” Rachel said.

In making scrambled eggs, you can also copy the tips from chef Thomas Keller. He recommends mixing the eggs instead of whisking them, then straining the eggs. This method can break down the protein in the egg.

Next, cook the scrambled eggs over very low heat. If you want it to be tastier, you can also add crème fraîche. “I can say the texture is soft like custard and the taste is amazing,” said TikToker Maxine Sharf, who has tried this recipe.
