Probably, it is one of the most loved and prepared dishes. There are the meatballs that Italians have in common, for example, the meatballs fried or with sauce, the classic grandma’s ones. There are regional proposals, such as those from Puglia with chicken. The Abruzzesi call them pallotte and are usually made with cheese and pepper. The Emilians prepare them with mortadella and parmesan, while i mondeghili Milanese are absolutely to be fried in butter!

Today, we bring you tasty meatballs with an easy cold-proof recipe and wallet. The peculiarity is that they are served in broth, so they could become a single dish and warm us up in these cold days. It is also perfect for vegetarians, as it is meatless. So, let’s put on our aprons and go!
for the meatballs
- stale bread 400 gr:
- the choice between parmesan, parmesan or caciocavallo, 70 gr;
- milk to taste;
- 1 egg;
- Salt, pepper, parsley, EVO oil to taste
For the broth
- a large potato;
- one large carrot;
- onion, one large;
- celery ;
- 2 cherry tomatoes (or a couple of tablespoons of tomato sauce);

First of all, let’s go prepare the broth. We peel the vegetables, cut them and put them in a pot (capacity of about 4 liters) and cover them with water. We put them on the fire and let them boil. We cook for 30-40 minutes.
Let’s go make the meatballs. In a deep container we put the stale bread cut into small pieces and we wet it with milk. We let it rest for a few minutes, so that the bread softens. After that, we eliminate the excess milk. To the bread, add the egg, minced garlic and parsley, seasoned cheese, salt and pepper. We mix everything well with our hands and create the meatballs.
We cook our meatballs in the vegetable broth and as soon as they rise to the surface we serve them in a deep dish accompanied by the hot broth. Enjoy your meal!
