Ingredients

for the meatballs

  • stale bread 400 gr:
  • the choice between parmesan, parmesan or caciocavallo, 70 gr;
  • milk to taste;
  • 1 egg;

Procedure

First of all, let’s go prepare the broth. We peel the vegetables, cut them and put them in a pot (capacity of about 4 liters) and cover them with water. We put them on the fire and let them boil. We cook for 30-40 minutes.

Let’s go make the meatballs. In a deep container we put the stale bread cut into small pieces and we wet it with milk. We let it rest for a few minutes, so that the bread softens. After that, we eliminate the excess milk. To the bread, add the egg, minced garlic and parsley, seasoned cheese, salt and pepper. We mix everything well with our hands and create the meatballs.

Final touch

We cook our meatballs in the vegetable broth and as soon as they rise to the surface we serve them in a deep dish accompanied by the hot broth. Enjoy your meal!
