Ammon – Here is how to make quiche with spinach:

ingredients:
– A bag of frozen and drained spinach.
– A cup and a half of all-purpose white flour.
– A quarter teaspoon of salt.
– Ten tablespoons of chilled butter, cut into small cubes.
– Five tablespoons of ice water.
– A quarter teaspoon of dried parsley.

For the filling:
– A cup of grated cheddar cheese.
– A cup of French white cheese.
– A quarter cup of sliced black olives.
– Two stalks of chopped green onions.
– A tablespoon of chopped fresh parsley.
– Half a cup of cream.
– A cup of liquid milk.
– Four eggs.
– Salt and ground black pepper as desired.

How to prepare:

1. Preheat the oven to 175°C (350°F).

2. To prepare the dough, in a food processor, add flour, salt, and parsley. Mix them well.

3. Add the cooled butter to the food processor and pulse several times until the mixture resembles crumbs.

4. Add two tablespoons of ice water and run the processor again until the dough is formed. If the mixture is too dry, add the remaining water little by little until the dough is consistent.

5. Shape the dough into a ball, wrap it in plastic, and place it in the refrigerator for about an hour.

6. While you are preparing the filling, place the drained spinach in a deep strainer and leave it until it gets rid of excess water. Then squeeze it by hand to get rid of more water.

7. In a bowl, mix cheddar cheese, white cheese, olive slices, green onions, and parsley.

8. In another bowl, whisk the eggs, milk, salt, and black pepper.

9. Add the egg mixture to the cheese mixture and stir until the mixture is combined.

10. After cooling the dough in the refrigerator, place it in a round baking pan with a diameter of 9 inches.

11. Pour the filling mixture over the dough.

12. Bake the quiche in the preheated oven for about 45-50 minutes or until the mixture sets and turns golden.

13. Pull the quiche from the oven and let it cool slightly before serving it.

14. Quiche can be served hot or cold with salad.
