Some people find it very difficult to deny that the liver and sausage sandwiches, which you can buy from a popular chain of stores spread in different areas of Cairo, are distinct and attractive to a large segment of customers.

This is not an advertisement of these shops, of course, and it seems that even those in charge of them believe that they do not need to be promoted, relying on elaborate “workmanship”, good use of raw materials, thoughtful service style, and pricing that responds to the purchasing power of a large segment of the public.

I do not have enough information about the health requirements for workers in the service of this “mark”, and I have not read an official report on the extent to which the raw materials and the mechanism of work conform to the conditions of making food. However, it appears that this “mark” has achieved success, to the extent that it expanded from a vehicle in One of the streets of Dokki district, to include eight stores distributed over areas mostly inhabited by middle-class segments, and enjoy a wide range of fast food options.

Two days ago, I read on the website of “Al-Masry Al-Youm” a report about a crisis experienced by the owner of the liver and sausage cart, which bears the name of that “mark”, and was stationed in one of the streets of Dokki, where it appeared there for the first time about 44 years ago. The district authorities raided the vehicle, confiscated it with the rest of the tools, before the owner returned to another monument instead of it, and started working again, in parallel to his endeavor to pay the value of the violation, which ranged, according to what he said, between 3 and 7 thousand pounds, to recover it.

This situation reminds me of the scene that I have seen repeatedly in many areas of the Republic, when neighborhood authorities stormed a cafe, food cart, or street vendors spreading sidewalks, to confiscate their goods and tools of industry and display, sabotaging the facility, and smacking its door, to get it out of service, due to the lack of a license.

The topic of the referred chain of liver stores raises a number of questions, among them: Why was this project, which shows signs of its success, not established? And why he could not obtain the required licenses to practice and develop his work? Why did the state not benefit from it by collecting taxes and fees, despite its willingness to pay it? Why are these exhausted raids taking place on all sides, and then the situation returns to the way it was soon after? Why do we not have the right in our country to use a berth, or to enjoy a commercial and industrial environment that is subject to the requirements and conform to the specifications?

What prevents the owners of this project, and others, from developing their businesses if they have demonstrated an effective performance? Why do we not have inspiring success stories in this regard such as “pizzahat”, “domino’s pizza”, “mcdonalds”, “kfc”, and others?

At its beginning, Pizzazt was a small restaurant in which two brothers shared 25 seats. Now there are 12,000 branches in 90 countries, with 30,000 employees, but this expansion and impressive success was not only a result of the quality of the “dough pizza” of course, but rather It was a partnership between a serious and ambitious “pizza maker”, a state that establishes, enshrines, and respects the law, institutions capable and willing to help and support small projects, and local agencies that do not spread theft and corruption and the desire to exploit the illegal conditions to achieve personal profits.

We have six million street vendors, thousands of cafes that operate without licenses, and similar food carts that are not subject to any monitoring or evaluation, but no one is willing to organize this mess, or invest this huge manpower, or develop what it might involve Energies and ambitions.

What can hundreds of thousands of people with those energies and initiatives do if they enjoy effective and efficient law, banking support programs, business development training courses, and a less corrupt environment?

What turns the offending cart and liver sausage into a project similar to “pizzahat” will of the state.
