“Le Roll” from New York debuts in Toulouse: Exploring the Pink City’s culinary scene

For Maxime Vegas, and his partner Joris Kinimo, “street food” does not rhyme with “junk food”. On the contrary, the two young Toulouse entrepreneurs took the side of the beautiful, but above all the good.

In close collaboration with local craftsmen, they get their supplies from Ek Patisserie aux Carmes, which makes them custom-made brioches, or from the Maison Phénicie butcher’s shop, located in Tournefeuille. At 35, the two friends, who met in college, left everything to imagine “Rolls” together.

These New York-inspired sandwiches, consisting of a brioche cut in half and browned in butter, are then garnished according to the inspirations of Maxime and Joris. After exploring African influences together with the chicken Yassa sandwich, this month, the adventurers of taste put the emphasis on the French terroir by imagining a sandwich filled with beef tongue sauce gribiche.

A daring bet, but which seems to have paid off
since the opening of their restaurant, a few months ago, at 27 rue des Filatiers.
