In Nancy, the Lacarte bakery is betting everything on the galette des rois

This is the queen of desserts for the month of January: the galette des rois! And Damien Lacarte will not say the opposite. This baker and pastry chef who has been living in Place Paul Painlevé since 2014 – you can’t invent that! – in Nancy made it its flagship product, his pride.

A pride born in 2016 with a first price won the competition of the galette des rois organized by the federation of bakers of Meurthe-et-Moselle. In five participations, Damien Lacarte and his team landed 4 podiums, including a second place for this 2021 vintage.

“We are told about it from October-November“, laughs Damien Lacarte. “Customers ask us when the competition will take place, it’s really a big expectation. Now that we have this notoriety of four awards, yes it’s our flagship product.”

The galette des rois with frangipane represents up to 15% of its turnover annual. “A good year will be in the month of January”, underlines the boss, “It gives the dynamic of the year.”

When he arrived in 2014, Damien Lacarte made 350 galette des rois. Son record ? 2 100. This year, Damien Lacarte is betting on 1,800 pancakes. With days that stretch from 4 am to 6 pm …
