If the sugar hasn’t started to melt yet, it means that the temperature is still too low and you need to wait a bit. The caramelization process requires at least 160°C, as soon as you realize that it has already started, wait another 3 minutes.

This method will help you perfect the preparation of any dish. But it will also facilitate the preparation of such a simple recipe as roast chicken. Choose the preparation of the marinade first. Add olive oil, herbs like oregano and thyme, or your favorite spices. Rub this marinade over the undivided chicken and let it sit in the cold overnight. If you add a tablespoon of fish sauce, 3 tablespoons of water and 3 teaspoons of rice vinegar, you will prepare an excellent caramel sauce. Let it all combine in the oven as you cook the chicken. The result is an original taste. Pour over the chicken just before serving
