For restaurateurs, this period represents a highlight of the year, particularly with company meals. But since government announcements , the phone calls follow one another to cancel. “At noon, at the moment, it’s rather quiet,” recognizes Sébastien Bau, boss of Bianco Nero, in Sarreguemines. He notes that “there are the consequences linked to paid tests but also to the fact that many employees are going back to teleworking”.

This cancellation movement has accelerated in recent days, to the chagrin of Jean-Michel Duwernell, from La Petite Auberge, in Sarreguemines: “We have some cancellations, but I especially regret that some small groups are coming, but with a large number. fewer guests than expected, and above all without warning. I find that regrettable, because if I am warned beforehand, I can rearrange the tables and that prevents me from refusing people. Otherwise, for a month of December, we’re working pretty well ”.

Fight the “no-show”

This boss does not rule out the idea of invoicing in the future menus that have not been canceled in advance. Indeed, hoteliers and restaurateurs are worried about decreases in their turnover due to cancellations that have occurred in recent days. According to a survey conducted by UMIH (Union of Hospitality Trades and Industries) to which 3,261 companies responded (including 58% restaurants and brasseries, 14% bars or cafes and 15.7% hotel-restaurants), nearly one in two (47%) reported an estimate of loss of turnover for December ranging from 10 to 30%. Almost one in three (30.5%) even expects a 30 to 50% loss, according to the tourist echo magazine.

To counter this phenomenon called « no-show » (or unreported cancellation), more and more restaurateurs, especially in large cities, like hoteliers, ask for a credit card number to prevent any cancellation that has not been made within a certain period of time. “At least the customers who can’t come take the trouble to cancel their table and notify the restaurant, otherwise their credit card will be charged. Habits persist and many customers have forgotten certain rules of life, ”notes Jean-Michel Duwernel.
