Why is the world facing a parmesan cheese shortage?

A shortage of Parmesan cheese is predicted against the backdrop of the drought that has hit Italy. The Po River, which feeds 30 percent of the country’s farms, has become very shallow, threatening the production of a popular cheese variety, according to CNN.

According to Massimiliano Fazzini, head of the Climate Risk Unit of the Italian Society of Environmental Geology, the water deficit in the river basin is between 45 and 70 percent. As the expert explains, the water flow of the Po is ensured by snow in the Alps and heavy rains in spring. However, since May 2022, the amount of precipitation has not been sufficient.

“Usually I am never a pessimist or an alarmist, but this time there are no options. The situation is critical and can only get worse,” Fazzini said.

The expert added that Po water is essential for the maintenance of dairy cattle. Cows usually give 30 liters of milk per day for the production of parmesan – for this purpose, each animal needs to drink 100-150 liters of water. Moisture is also needed to grow juicy fodder for the flock. The lack of water in the Po worries the Italians as their farms may be closed.
