  • 300 gr. Carnaroli rice;
  • 100 gr. of fresh spinach;
  • 80 gr. of raw ham;
  • 2 pears;
  • 1 cucumber;
  • 15 fresh mint leaves;
  • extra virgin olive oil to taste;
  • sale q.b.;
  • pepper as needed

Preparing this risotto is very simple and will take very little time. To start, we wash the mint well with running water and put its leaves in the mixer. We add a pinch of salt and 4 tablespoons of extra virgin olive oil. Once you have the mint pesto, let’s put it aside. Meanwhile, let’s peel the cucumber and cut it into cubes.

We peel the pears and cut them into thin slices. Finally, we also cut the raw ham into small pieces. In the meantime, let’s clean the spinach and wash them.
