The Burgundian Winner: Augustin Shines in the Best Croque-Monsieur Competition

The competition for the best croque-monsieur organized by France 3 Paris Ile-de-France was won by a Burgundian. After being selected like four other cooking enthusiasts among the hundreds of applications, Augustin seduced the jury with a recipe with flavors from his childhood.

“It was important to me to win, even more so with a recipe that uses Burgundy.” At the foot of the Eiffel Tower, mustard and parsley were Augustin’s secret weapon to convince the jury, as teasing as they were intransigent. In the heart of the international gastronomy village, chef Ghislaine Arabian and comedians Alex Vizorek and Frederick Sigrist had the difficult task of deciding between the five candidates. They were convinced by Augustin’s recipe.

Born in Dijon and originally from Nuits-Saint-Georges in the Côte d’Or department, this 31-year-old Burgundian, cinema cinematographer, is a great lover of cooking: he is also vice-champion of France, a pâté lover en croute and the croque-monsieur was a new challenge for him!

Combining deliciousness and freshness was Augustin’s challenge by integrating mustard, a thick slice of ham and parsley to give the meat the appearance of the marbled ham of his childhood. And for his recipe, the candidate therefore sacrificed the béchamel sauce, to the great displeasure of Ghislaine Arabian. But the chef ultimately didn’t hold it against him: “when we saw him start, cut, the care he took and the way he cut… that was obvious.”

Vinegar and lemon in the mixture of herbs, grated Comté and Emmental cheese gratinated with a blowtorch… Augustin left nothing to chance and this is not Alex Vizorek’s attempt to destabilize when developing the recipe failed to disrupt the candidate.

But Augustin’s performance should not overshadow those of the other candidates who competed in imagination: cornflakes, hummus, anchovies, bacon… they dared to integrate unexpected ingredients to seduce the jury. The competition for the best croque-monsieur can be seen again on france.tv/idf
