Boulet de Montauban is a chocolate specialty that celebrates the city’s resistance to the king’s seat in the 17th century. This dark chocolate ball contains a fine roasted hazelnut in its heart.

For nearly 30 years, the ball of Montauban (Tarn-et-Garonne) is exhibited on the stalls of Eric Mauranes’ bakery. The pastry chef only sells 900 boxes a year, but there is no question of doing without: “We have a Montalbanese specialty made by someone from Montauban, it’s like the stupidities of Cambrai, what could be better?“he asks. The vats of Maison Pécou take care of the preparation of this chocolate specialty.

The ball consists of a lightly roasted hazelnut, covered with dark chocolate, and a thin layer of sugar “, explains Bernard Pécou, manufacturer of dragees for several generations. The company created the boules in 1994 because the city was looking for a specialty. This ball pays homage to an episode of the XVIIth century which marked the city forever: in 1621, the Montalbanais resisted the king’s siege at all costs, despite the 400 cannon shots fired by the royal army. “The cannonballs are the symbol of the spirit of resistance of the Montalbanais “, explains Philippe Bécade, municipal councilor.
