The Baule. Eric Mignard regains his star at Castel Marie-Louise

Eric Mignard has just found his star. He had obtained it and kept it for 29 years before losing it in 2015. But this very constant and persevering chef knew how to question himself to regain his badge.

The Castel Marie-Louise Baulois and its chef Eric Mignard had lost their 29e consecutive Michelin star. He finds her again this year.

Eric Mignard, head of Castel Marie-Louise in La Baule, set up in front of the Baulois stoves more than 30 years ago and in the first year he obtained a Michelin badge.

“Le Lyonnais de la Bretagne”, as he calls himself, entered the kitchen at the age of 16, has seduced the taste buds with seriousness and regularity. Eric Mignard runs the cuisine of this Relais et Châteaux establishment with seven employees in the kitchen in winter and twelve in summer.

Otherwise, two Nantes restaurants won their first star.
