In any case, I think that the companies, given the big names that had already canceled, actually had little choice. Going anyway and telling people that it will not be too bad to have to go to court afterwards is also something that is not really good for the PR and such. On the other hand, following the example of the rest and canceling does not mean losing face, people who will not get sick due to your guilt etc … can only turn out well.
That it can be annoying for the organization but that is not directly the problem of the company. Not directly because many of the companies are members of the organization and therefore put money into it themselves, but that is still less annoying than sick people let alone dead people and lawsuits where it is pointed out that competitors had made the right choice and that your company is about corpses etc etc …
