The main reason for the increased price of the baguette is the price of flour. It has increased by 30 percent this year, says Dominique Anract, president of the national association of French pastry and bakers. This has something to do with the damp weather, which has caused crops to fail in many areas in France. But especially the rainfall and the fires in Russia and Canada have a major influence on that increase.
“The price of wheat is fixed worldwide in Chicago,” Anract says. The poor harvests in various places have therefore driven the price up internationally. “The balance between supply and demand has been disrupted,” he said.
The normal baguette would thus rise in price to an average of 1 euro. The price increase has already been implemented in some places. “There will be an additional 5 to 10 cents. Production costs are rising and so consumer prices will follow.”
