“The objective is 40% vegetarian food in Parisian collective catering”, explained to the assistant (PS and related) for sustainable food, Audrey Pulvar, who must present her plan for the five coming years.
Among the 21 managers of these 1,300 Parisian canteens (schools but also solidarity restaurants, nursing homes, city staff, etc.) which serve 30 million meals a year, “not all are at the same level of progress”, explains Pulvar. Elected environmentalists are calling for this measure to be implemented from the start of 2023.
