If you like experimenting, you can make your own mix of flour. Wheat flour can be replaced in whole or in part by spelled flour as well as rye flour. Just try out what tastes best to you personally.

With other types of flour, however, be careful about their properties. For example, if you work the dough for too long in the last short kneading process with spelled flour, the end result can quickly mutate into a flatbread rather than become a loaf of bread.
