How to Make Homemade Kombucha: A Healthy Drink for Digestive and Immune System

Not only yoghurt, kombucha is a healthy drink that is known to be good for the digestive system because it is rich in probiotics. This tea from China is made from fermentation scoby or symbiosis of yeast and bacteria.

Besides scoby, you need tea as another main ingredient. There are green teas and black teas that can be used to make kombucha. After going through the fermentation process, this tea will taste very sweet, sour and fizzy because it has been carbonized.

How to make

First, create scoby first. Prepare four glass jars with wide mouths, and make sure the jars are clean. Brew the tea with hot water in a jar, then let the tea steep for five minutes. Then, remove the tea bag in the jar using a clean spoon, then put the sugar in the jar and stir until the sugar dissolves. Leave the tea until the temperature changes to room temperature. Pour the kombucha into the jar containing the tea, then cover the jar using a cloth similar to a coffee filter. Store the jar at a temperature between 23-26 degrees Celsius, and avoid exposing the jar to direct sunlight. Let scoby Ferment for two to four weeks until it begins to form and grow. If it looks thick, scoby ready to be used to make kombucha. Next, combine all the kombucha ingredients, incl scoby which has been formed. Store in a jar for approximately a week. Kombucha is ready to be harvested and enjoyed.
