Method of preparation

It starts with the preparation of the acacia flowers that it would be recommended to collect yourself. And if you have the opportunity to collect them, do so after noon, when the sun’s rays are stronger and the inflorescence is maximally open. Do not collect flowers from roadside acacias because they are polluted and full of dust. Look for acacia forests growing away from cities and heavily traveled roads.

The next step after you have collected the flowers is to shake them well to remove impurities and insects from them. Separate them from the tails and rinse them well in several cold waters. Put them in the sieve and let them drain.

How to make syrup from acacia flowers

Use a saucepan or pot with higher walls that you place on the stove flame. Add water to it and let it boil. Add the well-drained acacia flowers and reduce the flame intensity to a minimum. Boil the acacia flowers for about 30-40 minutes.

After this time, pull the pan off the heat and cover it with a clean cheesecloth. Let the acacia flowers infuse for about 24 hours.

Then drain the liquid through cheesecloth and squeeze the flowers well out of the cheesecloth to get all their flavor. Add the sugar to the syrup and put the saucepan back on medium heat. Let the syrup boil, stirring with a spatula, until the sugar is dissolved. Reduce the heat to low and simmer the delicious acacia flower syrup until it reduces to almost half of its original amount.

Cut the lemon into smaller pieces, after washing it very well, and add the pieces to the syrup, including the peel. Boil the syrup for about 15 minutes, during which you are in charge of sterilizing the bottles or jars.

Put the syrup in smaller bottles or jars so that you can use it all up when you open them.

Put the hot syrup in the sterilized containers and close them hermetically with the corresponding lids. Cover them with a blanket and leave them there until completely cool.

Then you can label them and store them on your pantry shelf.
