Modern concepts for gastro variety at the airport / Four areas divided into two tender lots

Hamburg Airport is tendering a total of four catering areas internationally – divided into two lots. There are three areas in the security area and one in the public area. The airport attaches great importance to a varied range of food. Very different concepts are therefore being sought, from burgers to bowls, from bistro to restaurant. Suitability applications can be submitted until June 5, 2023 via the TED job advertisement platform. The start of the contract is April 1, 2024.

“We look forward to fresh concepts that will make the range of restaurants at the airport even more diverse. It is very important to us that all passengers are guaranteed to find something that suits them – regardless of whether they want to grab a snack shortly before departure or eat in peace,” says Lutz Deubel, Head of Center Management at Hamburg Airport.

Burger, Bowl & Co.: Versatile dishes for all times of the day

As part of its tender, Hamburg Airport is putting two lots with a total of four catering areas on the market. The first lot relates to an area of ​​approx. 100 m² in the Airport Plaza (security area) on level 2, where a burger restaurant is currently located. There will also be burgers there in the future: “It would be ideal for a well-known operator with a wide range of products for everyone: from classic burgers to vegan alternatives. A changing offer adapted to the time of day would also be interesting, so that our passengers could also have breakfast there in the morning hours,” says Lutz Deubel.
The second lot includes the following three areas:

  • Approx. 320 m² in Terminal 1, Level 3 (public area)
  • Approx. 100 m² in the plaza, level 2 (security area)
  • Approx. 230 m² pier at gate A17 (security area)

There are no fixed specifications for the first area in Terminal 1 (Level 3). The restaurateur has the chance to convince the airport with his idea. For the second area in Terminal 1, on the other hand, there are clear ideas: a healthy Asian concept is being sought with dishes such as bowls or curries, but no sushi. A three-part concept is to be created on the pier area, which will have something suitable for every requirement: on the one hand, the popular bistro concept is to remain. Passengers can order directly at the counter to take away or eat on site. Passengers with more time can also order à la carte at the table and enjoy good service – there is currently no such offer at the airport.

Hamburg Airport as a popular gastronomic location

Hamburg Airport is the largest airport in northern Germany and ranks fifth in Germany. With 11.1 million passengers in 2022, passenger numbers have increased again faster than expected after the pandemic. For comparison: In the pre-Corona year 2019, over 17 million passengers were counted. For restaurateurs, retailers and service providers, this means an international audience 365 days a year. The current 15 restaurants and cafés at the airport offer passengers and visitors a wide range of dishes – from sushi, noodles, sandwiches to a buffet.
