According to a report by the American Pistachio Growers, the cores have ingredients that can stop the growth of Staphylococcus aureus, MRSA, Listeria and Herpes Simplex Virus (HSV-1).

According to a study published by researchers from the University of Messina in Italy, the polyphenol compounds in pistachios have antiviral effects on HSV-1. Previously, in collaboration with researchers from the Food Research Institute in Norwich, UK, the scientists had found that polyphenol-rich extracts from pistachios have a potent bactericidal activity against gram-positive bacteria, including many clinical strains of the disease-causing Staphylococcus aureus, MRSA strains, and Listeria monocytogenes.

“Pistachio extracts could offer a novel topical or oral treatment for HSV-1 (herpes simplex) infections, as well as a novel strategy to overcome problems related to drug-resistant strains,” said Dr. Giuseppina Mandalari from the University of Messina. “The researchers are optimistic that the bactericidal effects of pistachio extracts could help control the growth of some microorganisms in food, which may lead to improved food safety, and as an application for the topical treatment of Staphylococcus aureus.”
