It’s been a long time since the 56 jurats of the brotherhood of the Tripière d’or, guardian of the fashionable tripe temple of Caen since 1952, had not had the pleasure of sauce the bottom of a dish together.
Last year, no appetizer, no competition, for the first time since 1952, due to the coronavirus epidemic. Only the school of the jurats had been able to take place but for the first time again, it had to relocate to a space larger than the premises of the gastronomic brotherhood in the ducal palace of Caen.
Stéphane Carbone, chef of the Incognito, rue de Courtonne, had offered his restaurant as a fallback solution. “That’s why we wanted to symbolically meet at his house this Saturday to relaunch our taste meetings, testify Michel Aulombard, and Jacques Lelandais, the new grand master freshly elected last year. Especially since Stéphane Carbone is a great defender of the fashionable tripe of Caen. »
For the 56 jurats, it was Saturday « to put the traditional recipe back in the mouth in order to be all on the same wavelength for the competition. » Meat, herbs, bouquet garni… Three tripe were tasted anonymously to “reframe everyone’s taste buds. »
Another appetizer will take place on October 2 before the 68e competition, at the ducal palace in Caen, Saturday 16 and Sunday 17 October. the last winner, Mattéo Lebosquain, the only winner to have kept his title for two years, will put the tripière back into play.
Until then, the new grand master Jacques Lelandais intends to make known the art of tripe “particularly in hotel schools, so that this Caen heritage is not lost and continues to appear on restaurant menus or on the stalls of butchers and delicatessens. Caen’s fashionable tripe should be listed as a UNESCO intangible heritage! »
