To reduce children’s desire for unhealthy snacks when they need energy, “Elvi” together with chef and nutritionist Yevgenia Jansonis offers students elegant and healthy snacks.

Healthy pea popcorn

Chickpea and pea snacks that are reminiscent of salty popcorn, but contain much more protein and much less fat than classic popcorn.

ingredients

400 g of frozen and defrosted peas

400g canned turkey peas without liquids

3 tbsp. olive oils

salt and pepper

1/2 tsp. ground coriander seeds

1/4 tsp. smoked paprika powder

1 Teaspoon. garlic powder

2 tbsp. sesame or chia seeds (optional)

Preparation

  • Chop the peas and chickpeas in a large bowl.
  • Add all other ingredients to the peas and mix so that the oil with spices covers the peas from all sides.
  • Place the peas on a baking sheet lined with parchment paper and bake at 170 ° for about 40 minutes, opening the oven door every 10 minutes and turning everything over.
  • Cool and have fun!

“Puffy” scones or cheese scones.

ingredients

310 g of wheat flour (150 g of whole wheat flour + 160 g of premium wheat flour)

1 Teaspoon. sugar

1/2 tsp. salt

4 tsp baking powder

100 g of cold butter

100 g grated hard cheese (cheddar, Holland, Tilsiter, Maasdam or similar)

a handful of finely chopped parsley

2 eggs

180 ml of buttermilk

milk for rolling out sandwiches

Preparation

  • In a large bowl, mix the wheat flour, sugar, salt and yeast.
  • Grate the butter over the flour mixture, combine it with the flour with your hands, forming crumbs. Do not stir for a long time, the flour mixture should remain as cold as possible.
  • Add the grated cheese and parsley, mix everything.
  • In a separate bowl, mix the eggs with the buttermilk and add to the dry mixture, mix everything until you get a homogeneous and well-compacted mixture (do not give in to the temptation to add more flour!).
  • Let the love cool in the refrigerator for 30 min.
  • Heat the oven to 180 degrees.
  • Make a 3 cm thick circle with a diameter of about 25 cm from the dough, then cut it into 8-10 triangles.
  • Arrange the dough on a baking sheet lined with parchment paper, placing each piece of dough about 2 cm away from each other (they swell well during cooking).
  • Brush each bun with milk and cook for 15-20 minutes until golden brown.

“Energetic Charge” Oat Butter

ingredients

90 g of oatmeal

35 g of wheat flour

1 Teaspoon. sodas

1 Teaspoon. cinnamon

a pinch of salt

2 eggs

250 g of peanut butter or other nut butter

100 g of golden syrup

vanilla sugar (optional)

100-150 g of dark chocolate

nuts / dried fruit for garnish

Preparation

  • Grease a suitable pan with butter and line it with parchment paper, heat the oven to 180 degrees.
  • In a large bowl, mix the oatmeal, wheat flour, cinnamon, baking soda, and salt.
  • In a separate bowl, beat the eggs with the nut butter, syrup, and vanilla sugar.
  • Mix the two parts until a homogeneous mixture is obtained, pour it into a pan and cook for about 25 minutes.
  • Melt the chocolate in a water bath or in the microwave, pour it over the finished cake, distribute evenly. Garnish with chopped nuts or dried fruit.
  • Place in the refrigerator and let it cool for at least an hour so that the chocolate hardens.
  • Cut into slices, wrap each slice in parchment paper – you’ll have the perfect after-workout or between-meal snack.
