Delicious Mushroom Ragout and Chicory Salad Recipe

Main course for 4 people Preparation: approximately 35 minutes

Ingredients:

2 onions 2 cloves of garlic 60 gr. butter 500-600 gr. mushrooms 70 gr. flour 900 ml mushroom stock 75 ml whipped cream 5 sprigs of thyme 1 tablespoon mustard 50 ml medium dry sherry Salt and pepper 4 ragout containers (homemade or ready-made)

Preparation method:

Step 1: Peel and chop the onions. Peel and finely chop the garlic.

Step 2: Heat 30 grams of butter in a frying pan or frying pan and fry the onion and garlic for about 3 minutes.

Step 3: In the meantime, cut the mushrooms into pieces. Strip the thyme from 3 branches. Add the mushrooms and thyme leaves to the onion and fry for about 5 minutes until nicely browned and then remove from the pan.

Step 4: Let the remaining butter melt in the pan and simmer. Add the flour and fry over low heat, stirring for a few minutes, so that the flour cooks.

Step 5: Add the stock little by little while stirring. Cook for 5 minutes until the sauce is thick and thick.

Step 6: Add the mushrooms and onion again. Add the cream.

Step 7: Season the ragout with the mustard, sherry, salt and pepper.

Step 8: Spoon into ragout containers, sprinkle with fresh thyme leaves and serve immediately. Delicious with a salad, for example with the chicory salad from the recipe below.

Chicory salad with blue stilton and roasted grapes

Salad for 4 people Preparation: approximately 35 minutes

Ingredients:

250 gr. small red seedless grapes Dash of neutral oil 60 gr. walnuts or hazelnuts 1 teaspoon mustard 3 tablespoons sherry vinegar or red wine vinegar 6 tablespoons extra virgin olive oil Salt and pepper 4 heads of chicory and/or radicchio 50 gr. arugula 150 gr. blue stilton

Additional supplies: a baking tray with baking paper

Preparation method:

Step 1: Preheat the oven to 200°C.

Step 2: Pick the grapes and place on the baking tray with a dash of oil. Place the grapes in the oven for 15-20 minutes.

Step 3: Meanwhile, roast the nuts in a dry frying pan.

Step 4: Mix the mustard with the vinegar and add the oil while whisking, so that you get a thickened dressing. Season with salt and pepper.

Step 5: Separate the chicory leaves and mix the chicory and arugula with the dressing.

Step 6: Place the salad on the plates. Divide the grapes over it.

Step 7: Cut the cheese into 4 pieces and place on the salad.

Step 8: Chop the nuts coarsely and sprinkle over the salad.
