Best Juicy Curd Pie | tv3.lv

It is recognized as the best juicy cottage cheese in our family. Smell, taste, crispness and juiciness at the same time.

ingredients

For the dough

300 g of flour

100 g of semolina (about a handful)

200 g of butter

150 g of sugar

2 teaspoons of baking powder

To fill

600 g of cottage cheese

6 eggs (beat better at room temperature)

About 150 g of sugar (you can have more, not less, but it’s a matter of taste)

2 teaspoons of vanilla sugar

4 tablespoons with a bunch of sour cream (gives juiciness)

3-4 teaspoons of potato starch (you can also use corn starch)

Grated lemon zest.

You can put raisins, apples or bananas. By adding well-ripened bananas to the curd mass, you will be able to add less sugar.

Preparation

  • Beat the butter with the sugar with a wooden spoon. In another bowl, mix the flour, semolina and baking powder.
  • The flour mass is mixed with the butter mass until a crumbly dough is formed, and then put in the refrigerator while preparing the cottage cheese filling.
  • Separate the egg whites from the yolks. Beat the egg whites until stiff and soft.
  • Beat the egg yolks with the sugar and vanilla sugar, mix in the cottage cheese, starch, add sour cream, mix. (If you add some fruit, raisins, banana, apple, mix it now to the dough.)
  • Beat the egg whites into the mixture.
  • Place the parchment paper in a baking tray and spread the shortcrust pastry on top. Spread it all over the pan and lightly press.
  • Put the curd mass on top, smooth it.
  • Bake at 180 degrees for about 45 minutes.
