Ammon – Here is how to prepare mumbar:

the components:
– 1 kilogram of mambar.
– 6 cups of basmati rice or regular rice.
– Half a kilogram of tomatoes.
– Half a kilogram of minced meat.
– A bouquet of green fennel leaves.
– Parsley garnish.
– Green coriander garnish.
– A tablespoon of safflower.
– Salt, to taste.
– black pepper.
– Mixed spices.

– 3 cinnamon sticks.
– A cardamom seed.
– Vegetable frying oil.
– vinegar.
– Lemon juice.

How to prepare:

1. We clean the mumbar well and rinse it with water, vinegar and salt. Then soak it for five minutes in water containing lemon juice and a little vinegar.

2. After that, we wash the mumbar again and put it in a strainer to drain completely.

3. We prepare the filling by mixing the soaked rice with the minced meat in a bowl. Then we add the mixed spices, black pepper, safflower, finely chopped parsley, finely chopped tomatoes, and finely chopped coriander. Mix the ingredients well, add olive oil and salt to taste.

4. We stuff the mumbar with the prepared filling. We hold one end of the mumbar and fill it with an amount of filling (about three-quarters of it), then we close the end using a needle and thread.

5. In a deep pot, boil the mumbar in water and add a little salt, bay leaf, cardamom and cinnamon sticks. Let it boil for a minute then transfer it to the pressure cooker.

6. Fill the mumbar with water in the pressure cooker, add the spices, then close the pot tightly and press on medium heat for a quarter of an hour until the mumbar is completely cooked.

7. Next, remove the mumbar from the water and leave it aside to cool.

8. In a deep frying pan, heat a large amount of vegetable frying oil and fry the mumbar until it turns golden.

9. Remove the fried mumbar from the oil and place it in a serving dish.

10. Decorate the surface of the mumbar with parsley, coriander, sweet pepper slices and tomato slices.

11. Mombar can be served with tomato sauce or yoghurt as desired.
