a competition of frangipane pancakes organized for the first time on a regional scale

It’s a first ! A jury composed of the five presidents of the bakers’ federations from the five departments of Pays-de-la-Loire will choose the best frangipane pancake in the region. This regional competition has just been created with the aim of initiating a nationwide movement and showcasing the know-how of artisan bakers. “We have the national baguette competition, the croissant but not the galette”, indignant Jean-Yves Gauthier, baker in Saint-Sébastien-sur-Loire and president of the federation of bakers of Loire-Atlantique.

what are the selection criteria?

“We pay attention to the appearance, then the cut and the puff pastry and when we taste, the pancake must melt in the mouth and we must find flavors of almonds, butter, and puff pastry. Everything must be balanced”, explains Jean-Yves Gauthier who is part of the jury. For this first edition of the regional frangipane pancake competition, ten bakers from all over the Pays-de-la-Loire region are participating. These are the first two of the departmental competitions, already organized for many years. “It’s important to keep these contests there because it generates 20 to 50% more sales for the winner”, insists Jean-Yves Gauthier.

Why only the frangipane pancake?

For departmental competitions there are two categories: frangipane and brioche. But for the regional competition, the presidents of the federations have chosen to keep only the frangipane pancake because it is the one that creates the most consensus and that we find in all the departments. The results of the departmental competitions should be unveiled this Monday, January 3 during the day. The regional competition will take place in the coming days but the date remains secret so that the competitors cannot apply just on D-day and that the pancake elected best frangipane pancake in Pays-de-la-Loire is the closest to the one that consumers will find in the window.
