This is what Catherine Huvelin tells us, daughter of the creator of this Niort chocolate factory “Michel Huvelin”. Guaranteed treat with chocolates made in a traditional way in the manufacturing workshop in Aiffres. Her daddy created the chocolate factory in 1963, so Catherine Huvelin fell for chocolate when she was little! “Better than the magic potion!” she tells us. She invites us to discover about sixty chocolates: with ganaches, praline, nougat, grand cru chocolates, chocolates that are out of the ordinary such as the cocoa cocktail range (Mojito, Piña Colada …) but also appetizers, the bars then new products such as this year, berry ganaches: passion from Ethiopia, red fruit from Tasmania … Each year, 2 new chocolates are made!

In 2006, the chocolate factory evolved by adding to its palette, the candy of angelica from the marais poitevin. The harvest takes place in July, the producer delivers the angelica cut between 50cm and 1m and then, it is placed in barrels of water and salt. As production progresses, it is then scalded, peeled, soaked in syrup baths by the chocolate makers to then be transformed into candied angelica coated with chocolate, ganache, caramel, marzipan, stick, jam. or liqueur …. These are to be enjoyed all year round! Note that the holidays are approaching, the seasonal chocolates to be discovered soon are truffles and guinettes (cherries dipped in cognac coated with chocolate).
