In New York City, Bradley Alvelo operates a mobile pizzeria out of a bright green Smart car known as Pizza Pod, serving fresh 12-inch pies priced from $16 to $20. The micro-restaurant utilizes two pizza ovens powered by a generator, transforming tight urban spaces into operational pop-up kitchens.

From Corporate Kitchens to a Smart Car Setup

Alvelo built a professional culinary career after graduating from the Culinary Institute of America. His background includes professional kitchens and corporate dining, including operations with the NFL and the New York Stock Exchange. Yet, that corporate path distanced him from the direct feedback of diners.

Seeking a return to personal connection, Alvelo launched Pizza Pod with a deliberately unconventional vehicle. The bright green Smart car houses a compact setup capable of producing specialty items like truffle and mushroom, creamy artichoke and garlic, ham and hot honey, and burrata pies. The menu also features a guava pepperoni pie as a nod to Alvelo’s Puerto Rican heritage.

Mastering Dough Fermentation and Street-Level Logistics

Operating a restaurant out of a compact vehicle requires precise off-site preparation. Alvelo makes his dough—utilizing a blend of Italian double-zero flour and bread flour—in an off-site commercial kitchen, allowing it to ferment for 72 hours before service. When pulling up to street fairs, private events, or partner locations like coffee shops, wine bars, and breweries, the operation expands minimally with a table and the vehicle’s oven system.
