Whereas regional favorites abound, several national and regional chains are earning accolades for their dedication to traditional techniques and flavorful results.
Truth BBQ, with locations in Texas, is receiving significant praise. Michelle Wallace, chef, owner, and pitmaster of B’tween Sandwich Co. And a contestant on Top Chef Season 21, lauded the restaurant’s commitment to Central Texas-style smoking. “Truth BBQ is worth all the hype that they receive and definitely worth the drive to go and eat it,” Wallace stated. She specifically highlighted their Wagyu brisket and Duroc ribs, noting the “expert technique” evident in every dish, and also praised their tater tot casserole as “so addictive.” Wallace also emphasized the welcoming atmosphere created by the Truth BBQ team.
Gatlin’s BBQ, a Houston-based establishment, is also gaining recognition for its authentic barbecue experience. Wallace described Gatlin’s as having a “down-home East Texas/Louisiana style BBQ vibe” and commended their skillful execution of low-and-slow smoking. She specifically called out the brisket and ribs as exceptional, and praised the sides as “mom’s recipes.” She also recommended the pancakes with sliced brisket for breakfast, adding a cautionary note to “leave time to take a nap afterwards.”
Dinosaur Bar-B-Que, a New York-based chain with six locations, is being recognized for its consistency and dedication to traditional methods. Mike Nugent, CEO and pitmaster at Dinosaur Bar-B-Que, explained that the chain has “built its reputation over decades by doing barbecue the hard way, slow-smoking meats fresh daily, using house-made rubs and sauces, and prioritizing technique over shortcuts.” He emphasized that Dinosaur Bar-B-Que maintains consistency across its locations without compromising on quality or regional traditions.
On the West Coast, Lucille’s Smokehouse BBQ is earning praise for its Southern-style barbecue. Brian Gunterman, butcher, pitmaster, CEO and Founder of DDR BBQ Supply, noted that Lucille’s “sticks to the Southern way,” with ribs that are “low and slow smoked” and a sauce that “raise[s] their taste rather than overpower it.” He added that “every bite speaks of the fact that it was served with attention.”
