Michelin-Starred Chef Guillaume Foucault Announces Ambitious New Project in Perche
Chef Guillaume Foucault, formerly of the Jardins de Chaumont restaurant and the Michelin-starred Pertica in Vendôme, is embarking on a “project of a lifetime” – the creation of Maison Foucault, a planned Relais et Châteaux property in the Perche region of France. The ambitious undertaking, slated to open in late 2027, aims for a two-Michelin-star rating and promises to showcase the unique beauty and culinary potential of the area.
Foucault, a perche native who describes himself as having “peasant DNA,” and his wife quy Phi are investing in the Roussard region - known for it’s distinctive ferruginous sandstone – to build a destination that will surprise and delight. This project represents a notable investment in the local economy and a bold step for the couple, following the success of Pertica, which earned its Michelin star in 2016 before closing its doors.
The new establishment will be built on a site boasting stunning sunsets and landscapes reminiscent of roussillon and gard. Foucault envisions Maison Foucault as a celebration of the Perche terroir, utilizing local ingredients and reflecting the region’s character. Construction is scheduled to begin in spring 2026, with the financing plan now finalized. The couple’s first venture, Pertica, opened in Vendôme in 2013 and served as a proving ground for their culinary vision.
