Michelin-Starred โChef โขGuillaume โคFoucault Announces Ambitious New Project in โPerche
Chef Guillaume Foucault, โฃformerly of the Jardins de โChaumont restaurant โคand the Michelin-starred Pertica in โฃVendรดme, is embarking onโ a “project of a lifetime” – the creation of Maison โขFoucault, a planned โฃRelais et Chรขteaux property in the โคPerche region of France. The ambitious undertaking, โคslatedโ to open in late 2027, aims for a โtwo-Michelin-star rating and โpromises to showcase the unique beauty and culinaryโ potential of the area.
Foucault, โa perche native โขwho describes โขhimself as having “peasant DNA,” and his wife quy Phi โare investing in โขthe Roussard region โค- known for it’s distinctive ferruginous sandstone – toโ build a destination โthatโ willโ surprise and delight. This project represents a notable investmentโ in theโ local economy and โa bold step for the couple, following the success of Pertica, โคwhich earned itsโ Michelin โฃstar in 2016 before closing its doors.
The new establishment will be โฃbuilt on โa site โฃboasting stunning sunsets and landscapes reminiscent of roussillon and gard. Foucault envisions Maison Foucault as a celebration โof the Perche terroir, utilizing local ingredients and reflecting the region’s character. Construction is scheduled โขto begin โin spring 2026, with the financing โplan now finalized. The couple’s โfirst โventure,โฃ Pertica, opened in Vendรดme in 2013 and servedโ as a provingโค ground for their culinary vision.
