National Potato Day
Every year on August 19th, we celebrate National Potato Day, a recognition of one of the world’s most beloved, versatile, yet often misunderstood tubers [[1]], [[2]],[[3]]. This humble tuber has powered civilizations, from ancient Peruvian farmers to modern athletes, adn packs a surprising nutritional punch.Potatoes were first cultivated between 5000 and 8000 BC in what is now southern Peru and northwest Bolivia. after the Spanish brought them to Europe in the 16th century, they became a global staple. In France, Antoine-Augustin Parmentier famously promoted potatoes as a nutritious food in the late 1700s, using clever publicity tactics. In 2008, the United Nations declared it the International Year of the Potato to highlight the crop’s critical role in global food security and nutrition.
Despite being unfairly labeled as simply “carbs,” potatoes are low in calories, high in nutrients, and wonderfully filling. They can actually support healthy weight control when prepared correctly.
Tips for enjoying potatoes healthily:
