New Rooftop Bar, Disuko, Brings ⁣1980s Tokyo Disco ⁣Vibe to Sydney

Sydney’s hospitality scene welcomes Disuko,⁤ a new rooftop bar and dining⁤ experiance inspired by the 1980s Tokyo disco era. Launched by ​Mamas ‍Dining Group,‍ the venue promises a vibrant atmosphere with‌ a focus on ⁤Japanese sakes, highballs, and an izakaya-inspired menu.

Disuko ⁢arrives​ as Sydney’s bar scene continues to evolve, seeking unique and immersive experiences. ⁢The bar caters⁣ to those seeking a elegant⁤ yet playful⁤ night out,offering both a lively bar area and an intimate eight-seater⁣ omakase dining experience. Its ​opening reflects a ⁤growing trend of‌ themed venues‌ and a demand for authentic Japanese ⁢culinary and ⁣beverage offerings in the⁣ city.

The bar boasts an ⁤impressive eight-meter bar,partially lined with a rotating ‍display of⁣ vinyl ‌records,alongside‌ a​ curated selection of Japanese sakes. ⁢Bar Manager Joshuiea ‌Scott⁢ will ​lead the beverage program, featuring signature cocktails⁣ like the Hana Nashi -⁢ a ⁤mix ⁣of⁤ Roku gin, rose water, lemon,‍ pear, and cloudy ​pear soda‌ – alongside the Ginza Girl, Disuko’s ‍take ​on⁣ the martini with red shiso infused gray Goose and Burmutton sake dry vermouth, and the Shogun, combining‍ green tea, ‍lemon, yuzu syrup,⁢ and gingerbeer.

head Chef hoa (ex-Kisume,⁢ Nobu)‍ has collaborated ⁢with Mamas Dining Group’s Creative‌ Culinary Director⁣ Michael⁣ Stoley‌ to develop a playful ‍menu‍ centered around ⁣smokey hibachi grilled bites, nigiri, and comforting Japanese hot food.

Mamas Dining group, also behind venues like Hochi Mama, Straight Outta Saigon, Kiss⁤ and Tell, and Suzie Q, announced the project earlier this‌ year.‌ Disuko is now open ‌to the public.
