Tokyo FM’s “KINKATSU TREND ONE” Spotlights Mushroom risotto for Seasonal Wellness
TOKYO – As the โfirst and second weeks of September mark a โคkey transition between seasons, Tokyo FM’s “KINKATSU TREND ONE” is focusing on combating seasonal fatigue with a nutrient-rich recipe featuringโฃ mushrooms. โThe program, hosted by Yuji and Yoshida Akiyo, highlighted the importance โof โsupporting the body’s naturalโค defenses as autumn approaches, especially for those experiencing appetite changes or weight concerns.
The segment featured Dr. Toshiyuki Matsuoka ofโข Esaka Matsuoka Eye Clinic, โขwho emphasized the benefits of โฃdietary fiber, beta-glucan,โ and GABA for maintaining well-being. These nutrients, โall found abundantly in mushrooms, contribute to a stronger immune system, stress relief, and improved sleep quality. To showcase how to easily incorporate these benefits โinto daily life, registered dietitian and food coordinator Kitajima Kana developed a simple “Bunashimejiโ and Bunnapi Cheese Risotto” recipe.
“Bunashimeji and Bunnapi โCheese Risotto” Recipe (Servesโ 1)
Ingredients:
Bunashimeji mushrooms: 1/4 bag
Bunnapi mushrooms: 1/4 bag
Sausages: 2 links
โ cooked rice: Approximately 120g
โMilk: โ100ml
Pizza cheese: 20g
Salt: to taste
Coarse black pepper: To taste
Instructions:
- Remove the base โฃof the bunashimeji and bunnapi mushrooms and gently loosen them.Slice the sausages into 5mm widths.
- Combineโข rice,mushrooms,sausages,and milk in a โheat-resistant container. Cover with plastic wrap โขand โmicrowave at 600W for 4 โคminutes.
- Mix well, transfer to a bowl, and sprinkle with coarse black pepper.
