TOKYO – As the ‌first and second weeks of September mark a ⁤key transition between seasons, Tokyo FM’s “KINKATSU TREND ONE” is focusing on combating seasonal fatigue with a nutrient-rich recipe featuring⁣ mushrooms. ‌The program, hosted by Yuji and Yoshida Akiyo, highlighted the importance ‍of ‌supporting the body’s natural⁤ defenses as autumn approaches, especially for those experiencing appetite changes or weight concerns.

The segment featured Dr. Toshiyuki Matsuoka of⁢ Esaka Matsuoka Eye Clinic, ⁢who emphasized the benefits of ⁣dietary fiber, beta-glucan,‍ and GABA for maintaining well-being. These nutrients, ​all found abundantly in mushrooms, contribute to a stronger immune system, stress relief, and improved sleep quality. To showcase how to easily incorporate these benefits ​into daily life, registered dietitian and food coordinator Kitajima Kana developed a simple “Bunashimeji‌ and Bunnapi Cheese Risotto” recipe.

“Bunashimeji and Bunnapi ‍Cheese Risotto” Recipe (Serves‍ 1)

Ingredients:

Bunashimeji mushrooms: 1/4 bag
Bunnapi mushrooms: 1/4 bag
Sausages: 2 links
‌ cooked rice: Approximately 120g
‌Milk: ‌100ml
Pizza cheese: 20g
Salt: to taste
Coarse black pepper: To taste

Instructions:

  1. Remove the base ⁣of the bunashimeji and bunnapi mushrooms and gently loosen them.Slice the sausages into 5mm widths.
  2. Combine⁢ rice,mushrooms,sausages,and milk in a ‍heat-resistant container. Cover with plastic wrap ⁢and ​microwave at 600W for 4 ⁤minutes.
  3. Mix well, transfer to a bowl, and sprinkle with coarse black pepper.
