Early Spring Gardening: What to Sow in February for a Head Start

by Lucas Fernandez – World Editor February 20, 2026
written by Lucas Fernandez – World Editor

Gardeners in France are gaining an early start to the growing season, sowing seeds in February to secure harvests weeks before their neighbors. This practice, detailed in recent reports from cuisineaz.com and bonne-recette.com, centers on selecting hardy vegetables capable of establishing roots during mild winter spells.

The key to this early success isn’t magic, but timing. Gardeners monitor soil temperature, waiting for it to consistently exceed 5°C (41°F) before sowing. This allows seeds to develop a strong root system, making the plants more resilient to both heat and drought later in the season, according to the reports. The relative absence of common garden pests like carrot flies, aphids, and cabbage moths during late winter provides a less stressful environment for seedlings to establish themselves.

Three vegetables are particularly well-suited to February sowing: parsnips, Blaro purple kale, and winter brown lettuce. Parsnips, known for their tolerance of cool temperatures, are sown in rows approximately 30cm apart, with seeds spaced every 10cm. Blaro kale, a robust variety, can withstand light frosts and thrives in consistently moist soil. Winter brown lettuce, with its reddish-brown leaves, is also cold-tolerant and can be harvested as early as April. Radishes, spinach, peas, and fava beans are also frequently included in these early sowings, creating a diverse garden well before spring officially begins.

Preparation for these early sowings is minimal. Gardeners lightly scratch the soil surface to aerate it without disturbing the beneficial organisms within. Seeds are sown thinly, gently pressed into the soil, and lightly watered using a spray to avoid creating crusts or promoting disease. In the event of a predicted hard frost, a protective layer of horticultural fleece can provide additional insulation.

Some gardeners are also utilizing this time to start tomatoes and peppers indoors, in locations with temperatures between 18-20°C (64-68°F), while their hardier crops take advantage of the outdoor conditions. A further advantage, as reported by cuisineaz.com, is the practice of saving seeds from successful early crops – parsnips, lettuce, and kale – to ensure future generations are adapted to the specific garden conditions.

As highlighted by salads4lunch.com, February offers a unique opportunity to enjoy seasonal produce at its peak freshness and affordability, encouraging gardeners to embrace the flavors of the winter months.
