Dr. Daniel Valencia’s “Valencia Diet”: TikTok’s Viral Plan for Hispanic Health

DALLAS – Dr. Daniel Valencia, a Dallas-based physician, has amassed a significant online following and sparked a viral health trend with his “Valencia Diet,” a meal plan centered on whole, unprocessed foods adapted for the Hispanic community. Millions have viewed his videos on TikTok, where he shares medical advice and promotes a lifestyle he describes as a blend of science, faith, and community service.

The Valencia Diet, detailed in Dr. Valencia’s 2024 book, Valencia Lifestyle, emphasizes increasing intake of vegetables, grains, and both animal and non-animal proteins, while still allowing for culturally relevant foods like mole, birria, and tacos. “This is an anti-inflammatory diet,” Valencia told The Dallas Morning News, acknowledging its similarities to the Mediterranean diet but tailored for accessibility within Hispanic communities. “But if I tell patients to follow that diet, they wouldn’t even know where to start.”

Dr. Valencia, a Doctor of Osteopathic Medicine (DO), shares nutritional advice and lifestyle tips primarily on TikTok, where he has cultivated a substantial following. His approach centers on making health and wellness more accessible through simple, science-backed dietary changes, focusing on plant-based foods, nutrient-dense meals, and metabolic flexibility. He credits a divine source for inspiration, stating he “asked God” for a recipe to lower sugar and inflammation, resulting in the popular “Valencia Juice” – a blend of ten natural ingredients including beets, pineapple, spinach, and blueberries.

The diet’s popularity is evidenced by over 30,000 copies of Valencia Lifestyle sold since its publication, and numerous testimonials on social media reporting decreased inflammation and blood sugar levels. Dr. Valencia currently conducts telephone consultations with patients, often sharing excerpts on social media.

Milette Siller, co-creator of the Culinary Medicine program at UT Southwestern, praised the Valencia Diet for aligning with established healthy eating models. “There are lots of things here to celebrate,” Siller said. “I love, love, love that he focuses on produce, colorful fruits and vegetables, but also on protein because we always aim for to maintain muscle.” She further noted the diet’s cultural relevance as a key strength in reaching the Hispanic community, highlighting its high fiber content, minimally processed foods, and low salt content.

Dr. Valencia’s journey to developing the diet stemmed from observing patients with dangerously high blood sugar levels who were seeking dietary guidance. He initially provided a written plan that led to improvements in their health, prompting him to further systematize his knowledge through studies at Harvard University.

Born to Mexican parents in San Jose, California, Dr. Valencia spent several years of his childhood in Apatzingán, Michoacán, Mexico, where he learned Spanish and developed an understanding of the country’s food culture and its importance to families. He aspires to global recognition for the Valencia Diet and, to receive the Nobel Prize, believing that its success warrants ambitious goals. “If it works and is helping to save lives, you have to think big,” he said.
