ALLENTOWN, Pa. – Award-winning Chef โขJose Garces is expandingโ his Lehighโค Valley footprint with Okatshe, a new Japanese sushi house andโฃ whiskey bar,โ set โto open Wednesday,โ October 1st. The restaurant, located in the 900 block of Hamilton Street adjacent to the moxy hotel, promises an immersive dining experience inspired byโข the vibrant street scenes of Tokyo.
Okatshe marks Garces’ second Allentown restaurant and represents a significant investmentโฃ in the city’sโค growing culinaryโ landscape. The James Beard Award-winning chef, knownโฃ for โฃhis innovative approach to cuisine, aims to bring an authentic taste of Japan-sourced from world-renowned Yama Seafood-alongโ with โhis own unique culinary spinโค toโข the Lehigh Valley. The opening is expected to draw regional diners and further establish Allentown as aโข dining destination.
“Okatshe is my ode to โJapanese cuisine and โculture,” Garces saeid, describing theโ restaurant’s โconcept. “Tokyo, to me, has always been number โone in termsโ of the culture’s appreciation for fine ingredients. All I know is, whenโข I’m in Tokyo, theโค ingredients โin the food is pretty breathtaking.”
Garces,โค a Chicago native, first โgained prominence with the 2005 โฃopening of Amada in Philadelphia,โข a restaurant credited with helping โto revitalize the city’s food scene.โ he further cemented his โreputation โฃasโข a culinary force in 2009 by winning the Foodโฃ Network’s Iron Chef competition.
More recently, Garces previewed โculinaryโฃ creations for hisโข Cuban-themed restaurant, Rosa Blanca, โคwhich opened in March, from โa test kitchen just outside Philadelphia. At Okatshe, he plans to offerโค bothโ customary โJapanese dishes and innovative smallโ plates.
“So we have real, authentic Japanese cuisine as well,” Garces explained. “Alongโ with myโ collaboration, which โฃisโฃ just a little spin on it.”โข Theโฃ name โ”Okatshe” itself means something sweet, hinting โฃat the delightful experience Garces intends to deliver.
