The decision, made in mutual consultation with the hotel’s ownership, allows Berendsen and his partner, Soumia Chouaf, to focus on their upcoming autonomous venture, slated for a summer 2026 opening.

Berendsen, who helmed the kitchen at La Butte Aux Bois for 15 years, expressed his commitment to giving his best until his final day. His departure coincided with receiving the prestigious Cristal Prize as Chef of the Year. Chouaf, also Maître at the restaurant, shared on Facebook that while the early end to their collaboration is painful, it marks the beginning of an exciting new chapter.

Jochen Leën, owner of La Butte Aux Bois and Hotel Stiemerheide, confirmed the early departure, stating, “The initial intention was to continue with each other until the end of the year, but through this decision we can start our new story earlier.” The restaurant will revert to its original name,”La source,” signifying a return to its roots.

Taking over the culinary reins at La Butte Aux Bois is Ralph Hermans, formerly of Rantree in Maastricht, where he earned a Michelin star. Hermans began working at La Butte Aux Bois several months ago,preparing for the transition under Berendsen’s guidance.
