Moroccan Olives: Easy Chermoula Recipe with Green Olives & Spices

A vibrant, aromatic olive preparation, traditionally served with bread or as an accompaniment to Moroccan dishes, is gaining attention for its complex flavors and relatively simple preparation. The dish, known as a chermoula-marinated olive blend, centers around green olives and preserved lemon, and is experiencing a surge in online interest.

The core of the recipe involves approximately 500 grams of green olives, ideally rinsed if overly salty. Three cloves of garlic are finely chopped and combined with half a preserved lemon, cut into small pieces. Spices play a crucial role, with one teaspoon of paprika, half a teaspoon of cumin, and a pinch of chili powder – the latter optional for those preferring a milder flavor – added to the mix. Fresh coriander and parsley, each used in a small bunch, are also incorporated.

The preparation method, as detailed in recent online posts, calls for heating four tablespoons of olive oil in a small pan. The chopped garlic, paprika, cumin, and chili powder are sautéed in the oil before the addition of the parsley, coriander, and preserved lemon. The olives are then added, along with a small glass of water, and the mixture is left to simmer for five to eight minutes. This allows the olives to fully absorb the flavors of the chermoula. A final touch of half a lemon’s juice is added before allowing the mixture to cool before serving.

Social media platforms, including Facebook, Instagram, and TikTok, have seen a rise in shared recipes and videos demonstrating the preparation of this dish. A post from November 2, 2025, on a Facebook group dedicated to Moroccan cuisine details the ingredients and method. Similarly, an Instagram reel published on April 17, 2025, highlights the importance of desalinating the olives and preserved lemon by soaking them for 30 minutes prior to cooking. Another Instagram post from July 29, 2025, provides a slightly different ratio of ingredients, using 10 olives and 20 grams of olive oil, along with 100ml of water.

The dish is described as creating olives with a highly fragrant profile, comparable to those found in Moroccan restaurants. A TikTok video from August 28, 2022, showcases the recipe alongside other Moroccan-inspired dishes, including chicken tagine with apricots and almonds.
