Latvian Stores See Surge in Pickled Beet Sales as Cold Soup season Heats Up
RIGA – Latvian consumers are driving a significant increase in demand for pickled beets, with sales of teh “Spilva” brand rising more then twofold in July, according to data released this week. The spike coincides with the traditional summer season for aukstā zupa, or cold soup, a popular Latvian dish.
Store managers report consistently growing demand week over week for the product. The hot weather experienced in Latvia during recent weeks has fueled the trend, as residents favor lighter, cooler meals.
Alongside the beet boom, pickle sales have jumped over 70% compared to last season, suggesting a broader consumer interest in convenient ingredients for summer cooking.
“the beginning of summer in Latvia traditionally means cold soup season – food that is not only tasty and healthy, but also easy and speedy to cook,” says Laura Bagāta, Head of Communication and Sustainability at orkla Latvija. “This year, we see that the demand for ‘Spilva’ marinated beets has grown rapidly in July, which reaffirms the popularity of cold soup among the Latvian population.”
Classic marinated beets with caraway remain the most popular variety, favored for their traditional flavor in aukstā zupa. The data indicates consumers largely prefer to assemble the soup themselves using individual ingredients rather than pre-made mixes.
