Camille Allard and Paule Reydet open 45° La Bonne Latitude in Megève

Camille Allard and Paule Reydet have opened a new seasonal restaurant named 45° La Bonne Latitude in Megève, located at the foot of the Jaillet gondola lift, Les Nouvelles Gastronomiques reported. The 31-year-old chef and his partner, 27, launched the venture to serve entirely homemade, regional French cuisine at accessible prices after previous experience at high-end dining destinations.

From Michelin-Starred Kitchens to the Slopes of Megève

Allard is originally from Demi-Quartier near Megève, where he completed his initial cooking apprenticeship. He subsequently spent four years at Le Clos des Sens in Annecy-le-Vieux, contributing to the establishment earning its third Michelin star in 2019. It was during this tenure that he met Reydet, an Espagne native and graduate of the Institut Paul Bocuse who completed a training stage at the restaurant. The pair later worked together at Les Sources de Caudalie in Martillac near Bordeaux under two-star chef Nicolas Masse, before opening their first joint venture, La Roselière in Annecy, which they operated for two years.

45° La Bonne Latitude Serves Regional Dishes

Operating at 813 route du Jaillet near the four-season toboggan run, 45° La Bonne Latitude features a 44-seat dining room and a 48-seat terrace. The business also runs a food truck named 45.5° Latitude point cinq at the top of the Jaillet gondola. The current daily menu includes shared regional charcuterie or cheese plates, a 240-gram roasted reblochon, and chickpea hummus. Main dishes include butternut risotto with a reblochon siphon and hazelnuts, trout with mushroom cream and trout roe, and farm-raised poultry served with polenta, poulette sauce, and frisée salad. Desserts consist of a honey madeleine with yogurt ice cream, toasted almonds, and honey tuile, alongside poached pear with hazelnut crumble and praline cream.
